What is Lechon?

Lechon is a Filipino delicacy that originated from Spain. Its name comes from the Spanish word leche—which means milk, and alludes to young, immature piglets that were originally used for the dish—hence the term: “roasted suckling pig”.

The dish made its first appearance in the country in Cebu back during the 1920s, and it comes as no surprise that the city is one of (if not the most) well-known place that serves it! Since then, other locales have tried their hand at making their own versions and styles of the meal, offering other options such as Lechon Manok and Lechon Baka. While this innovation satisfies the appetites of those looking for something different, nothing beats the classic household feast.

It takes hours to perfectly roast a pig over charcoal. Visayan lechon, however, goes as far as cooking the pig using charcoal made from the husk of coconuts, which accounts for that familiar smoky flavor. Picture the loud crunch that accompanies each bite of lechon—the lengthy roasting process is what makes that possible; allowing the pig to be extra tender on the inside and deliciously crispy on the outside. If that’s not enough to make you want a serving, I’m not sure what will.
